So, basically, when writing up a character, we're using the heroic generation, which is 2d6+6 to generate stats. One re-rolled stat.
I'm not policing this, because that's dumb. We're all class acts here.
Character level is 1, for future building, your first five HD will be maxed.
Bare minimum, 1 paragraph for your origins. Send it via PM and I'll review it.

So how do I make a former knight who lost the love of his life to a somewhat evil king. He now is a drunken bard who sings and complains most of the time.
Okay too much Galavant.
Maybe an undead Warlock who rules a small town of undead?
Give me time and I will come up with something original (hopefully).

On a serious note if I was making a Human Cavalier/ Knight type what order or country could he be from?

Depends on the style. Nordic bent would be Vindr, Krieg if you want a more German Gothic, Serenia is more Italy and Avalon is more English.

Do you plan on having guns in your games? I like my rpg's a bit more medieval.

Guns are indeed a thing, yeah. Emerging firearms, and it's likely staying that way.
